Soft Pretzels

1 package yeast, dry
1 1/2 cups water, lukewarm (105 to 110 degrees F.)
1 teaspoon salt
2 teaspoons sugar
4 cups flour
1 egg, beaten
kosher salt, coarse




Preheat oven to 400 degrees F. Dissolve yeast in warm water in a large bowl. Add salt, sugar, and flour. Stir until mixture is smooth and does not stick to the sides of the bowl. Place the dough on a floured board and knead to make soft, smooth dough, about 10 minutes. Extra flour will be needed. Do not let the dough rise. Cut immediately into small pieces and roll into pencil-thin ropes. Shape into pretzel or other shapes. TO shape like a pretzel; roll dough about 14 inches long; bend into a “U” shape; cross one end of the rope over the other about 3 inches from the ends; twist crossed ends a full turn; fold back toward middle of “U” and open slightly. Press ends into dough firmly. Place on a cookie sheet covered with foil and lightly floured. Brush with egg and sprinkle with salt. Bake for 15 minutes or until golden brown.
