2 cups biscuit mix
2/3 cup milk
3 medium tomatoes, peeled and sliced 1/4 inch thick
1 1/2 cups yellow onion, finely chopped (topping)
2 tablespoons butter, (topping)
3/4 cup sour cream, (topping)
1/3 cup mayonnaise, (topping)
1 cup grated cheddar cheese, (topping)
1 teaspoon salt, (topping)
1/4 teaspoon pepper, (topping)
1/4 teaspoon oregano leaves, (topping)
pinch sage
paprika, for garnish (topping)

Bread: Preheat oven to 400 degrees F. Butter a 13 x 9 x 2-inch baking dish. Combine biscuit mix and milk. Knead lightly on a well-floured surface. Roll out dough until it is a little larger than the dish. Press into dish, pushing dough up on sides to form a ½-inch rim. Arrange tomato slices on top.
Topping: Saute onion in butter until tender, add remaining ingredients, and spread over tomatoes. Sprinkle with paprika and bake for 25 minutes.
