Pinto Beans
This is the perfect bean dip for refritos, chalupas or nachos.

1 pound pinto beans, dried
4 slices bacon, cut in thin strips
1 large onion, chopped
1 tablespoon chili powder
2 teaspoons cumin
1 teaspoon thyme
salt




Wash beans thoroughly. Set aside. In Dutch oven, fry bacon until crisp; add onions and saute until soft. Add beans, chili powder, cumin, thyme and salt. Cover with water (about 3-1/2 to 4 cups). Cook slowly for 5-6 hours, or until beans are tender. To thicken gravy, spoon out about 1/2 cup beans, mash with fork, and return to pot. Serve hot. These beans freeze very well and are great to have on hand for refritos, chalupas or nachos.
