Texas Jailhouse Chili

1/2 pound beef suet
2 1/2 pounds coarsely ground beef chuck
3 cloves garlic, minced
1 1/2 tablespoons paprika
1 tablespoon ground cumin
1 tablespoon salt
1 tablespoon white pepper
1 1/2 tablespoons diced green pepper
1 teaspoon coriander
3 cups water
3 tablespoons chile molido, (chili powder with no additives; if unobtainable, use Spice Islands)




Melt suet in Dutch oven; add meat and brown. Add other ingredients and cook, covered, for 4 hours. (If a less "hot" chili is desired, increase paprika to 2-1/2 tablespoons and decrease chili powder to 2 tablespoons.) Add more water while cooking, if necessary. If desired, pink oval chili beans may be added.
