Scallops Ceviche

1/2 pound scallops
1 large tomato, fresh
2 small green chiles
1 onion, finely chopped
Juice from 4 lemons, or 5 limes
1/4 cup olive oil
1 teaspoon oregano
Salt and pepper




Cut scallops in bite-sized pieces. Peel tomatoes and dice. Remove seeds, and chop green chiles into very small pieces. Combine all ingredients, mix well, and let stand at least 12 hours, stirring occasionally. (Lemon juice "cooks" the scallops.) This is a classic Mexican favorite. Serve in seafood cocktail glasses.
