Trout Meuniere

1 pound trout fillets
Salt and pepper
milk
flour
1/2 cup olive oil
1/2 cup butter
1/2 cup chopped parsley
1 or 2 cloves garlic, crushed
1 tablespoon lemon juice




Season fillets with salt and pepper. Dip in milk, then in flour. Brown on each side in olive oil. While trout is cooking, brown butter in small saucepan. Add parsley, garlic and lemon juice. Serve hot sauce over browned trout.
