Sole of Flounder Meuniere

2 1/2 to 3 pounds fish fillets, 10 small fillets
salt
white pepper
cream
flour
2 tablespoons cooking oil
4 tablespoonns butter
2 tablespoons parsley, finely chopped
1/4 cup lemon juice




Season fish with salt and white pepper. Dip in cream and dredge lightly in flour. Heat oil and half of the butter in skillet; lightly brown fish fillets 2-3 minutes on each side. Remove to serving platter; keep warm. Heat remaining 2 tablespoons butter, in clean skillet. Sprinkle fish with parsley and lemon juice. Pour hot butter over all.
