Shrimp Creole

1 cup chopped onion
1 cup chopped celery
1 chopped green pepper
3 tablespoons bacon drippings
1 1/2 teaspoons salt
1 tablespoon flour
2 teaspoons chili powder
1/2 teaspoon Tabasco
1 can (1 lb.) green peas
Liquid from green peas
1 can (1 pound) tomatoes, chopped
2 cups cooked and shelled shrimp

Over low heat, lightly brown onion, celery and green pepper in bacon drippings. Add salt, flour, chili powder and Tabasco. Add liquid from peans plus enough water to make 1 cup. Simmer, uncovered, for 10 minutes, sitrring until thickened. Blend in peas and tomatoes; simmer 10 minutes longer. Add shrimp; heat thoroughly. Serve over rice. This can be cooked ahead of time and can be frozen successfully.
