Shrimp and Wild Rice
This shrimp and rice dish is excellent.

12 ounces wild rice, uncooked, or long grain and wild rice mixture
3 pounds shrimp, raw
1 onion, chopped
1 green pepper, chopped
2 tablespoons butter
1 1/2 cups cream
1/2 cup sherry
2 cups chili sauce




Cook rice; set aside. Cook shrimp in highly seasoned water. When done drain off liquid and allow shrimp to cool. Shell and devein shrimp. Saute onion and green pepper in butter until tender. Add cream, sherry and chili sauce. Add rice and shrimp to sauce and mix well; pour into buttered 3-quart casserole. Bake, covered, in 350 degree oven for 1 hour.
