Spiced Pineapple and Apricots

1 cup apricot nectar, or pineapple juice
2/3 cup wine vinegar, distilled
1 1/4 cups sugar
2 teaspoons ground ginger
2 teaspoons ground cinnamon
2 teaspoons ground cloves
2 cups fresh pineapple, cubed
2 cups fresh apricots, pitted and halved




Heat nectar, vinegar, sugar, ginger, cinnamon, and cloves in a medium saucepan. Bring to a boil, reduce heat, and simmer uncovered 5 minutes. Stir in pineapple and apricots, bring to a boil, reduce heat, and simmer uncovered until fruit is just tender, 8 to 10 minutes more. Remove from heat and cool to room temperature. Spoon into sterilized jars. Cover and refrigerate.
