2 cups apple cider vinegar
1 1/3 cups sugar
1 tablespoon fresh basil, chopped
1/4 teaspoon freshly ground pepper
1 cup green bell pepper, diced
1 cup red bell pepper, diced
4 ears (2 cups) corn, cooked, use kernels only

Combine vinegar, sugar, basil, and pepper in a medium saucepan. Reduce heat and simmer 10 minutes. Add bell peppers and simmer 3 minutes. Stir in corn. Cool to room temperature. Spoon into sterilized jars. Cover and refrigerate.
