Crabmeat Jubilee
A tasty crabmeat dish.

1 onion, chopped
3 tablespoons bacon drippings
2 garlic cloves, crushed
1 pound lump crabmeat
1 small box (3 1/2 ounces) Saltine crackers, crushed
Salt and pepper
1 cup cream
1/2 cup butter, melted

Saute onion in bacon drippings until golden. Add garlic, and continue cooking until drown. Remove from heat. Add crabmeat and half of the crushed crackers. Season with salt, pepper and cayenne. Spoon mixture into buttered casserole. Pour cream over mixture. Sprinkle remaining crackers on top. Pour melted butter over all. Bake at 350 for 20 minutes, or until brown.
