Venison Chili

1 pound venison, ground
vinegar
1 onion, chopped
2 tablespoons lard
beef consomme, or bouillon
1 can (10 ounces) tomatoes, Rotel and green chilies
2 tablespoons chili powder
Salt and pepper, to taste




marinate meat in vinegar about 1 hour. rinse well and drain. Brown meat, onions and garlic in lard in Dutch oven. add enough consomme or bouillon to cover meat. Add tomatoes, chili powder, salt and pepper. Simmer, covered, at least 2 hours.
