Roast Venison with Horseradish

1 2 1/2 pound venison, roast
1 medium onion, sliced
1 cup cooking oil
1/2 cup lemon juice
1 teaspoon salt
6 slices bacon
2 tablespoons horseradish
6 tablespoons sherry

In a large bowl place roast and a mixture of onion, cooking oil, lemon juice and salt. cover tightly and refrigerate for 24 hours. remove roast from marinade and wrap it with bacon. Bake in roasting pan at 300 degrees for 2 hours, basting frequently with marinade. When roast is done, remove to platter and skim most of the fat from the pan. stir horseradish and sherry into remaining gravy to serve over roast.May be thickened with flour if desired.
