Wild Duck with Olive Sauce

3 or 4 large duck
flour
Salt and pepper
bacon drippings
2 1/2 cups water
1 cup green olives, sliced
1/2 cup white wine




Dredge ducks in flour which has been seasoned with salt and pepper. Brown well in bacon drippings in Dutch oven. Remove ducks and set aside. Make sauce by stirring enough flour in the the fat to make a thin paste; then stir in water and salt to taste. Add olives and place the ducks in the sauce. bake, covered, in 375 degree oven for 2-3 hours or until tender, adding more water if necessary. to serve, remove ducks to platter, skim off excess fat, and add wine to sauce. pour sauce over ducks to serve.
