Roast Wild Duck

2 quarts water
3 ribs celery
2 medium carrots, cut in half
1 onion, quarter
1 salt
4-6 duck, or geese
apple, quarters
onion, quartered

Make stock by simmering water, celery, carrots, onion and salt together for 1-2 hours. Rub each duck with mixture of softened margaine and flour. stuff cavities of ducks with 1 or 2 quarters each of apple and onion. Bake in roasting pan, uncovered, at 450 degrees for 30 minutes, or until browned. reduce heat to 350 degrees and cover pan. cook 4 hours, basting with prepared stock ever 30 minutes. To make gravy, thicken drippings with 1-2 tablespoons flour and cook until smooth. Add stock to thin grav to desired consistency. Allow 1 duck per person. Geese also can be cooked this way, but for a longer time, about 6 hours.
