Winter Chutney
Serve this with poultry or pork. It's especially tasty with duck.

3 pears, peeled, cored, and cut into chunks
1 cup mixed dried fruit, or any combination of your favorites or 1 cup apple cider, pear juice or water
2 tablespoons sliced scallions
2 tablespoons lemon juice
1 cup sugar
1 teaspoon grated lemon peel
1/4 teaspoon crushed red pepper flakes
1 1/2 teaspoons poons slivered crystallized ginger




Combine all the ingredients in a crockpot. Cover and cook on low for 3 to 4 hours.

Alternatively, cook the ingredients in a non-reactive saucepan over medium-low for 30 to 35 minutes or until the fruit softens.

Let the chutney cool to room temperature. Transfer to a glass, ceramic, or plastic container. Cover and refrigerate until ready to use. The chutney keeps for up to a week.
