Quail or Pheasant
Enjoy a scrumptious and sophisticated quail or pheasant meal.

8-10 quail, or 2-3 pheasants
Salt and pepper
1/4 cup margarine
1/4 cup shortening
1 cup chicken consomme
poultry seasoning
sherry, (optional)




Salt and pepper birds lightly. Saute in mixture of margarine and shortening until lightly browned. Remove birds to baking dish. Add comsomme to the drippings and season with additional salt and pepper, and poultry seasoning. Pour gravy (it will be very thin) over birds; cover and bake in 325 degree oven for approximately 1 hour, or until tender. Baste birds with sherry once or twice, if desired. Serve with rice.
