Chilled Green Chile Soup

1 1/2 cups chicken stock
1/4 cup onion, minced
3 ounces cream cheese, softened
1 cup sour cream
2 cans (4 1/2 ounces each) diced green chilies
1/4 teaspoon ground cumin
1 teaspoon garlic, minced
1 cup heavy whipping cream
1/2 teaspoon salt




Bring stock and onion to a boil. Reduce heat and simmer 5 minutes. Cool. Blend cream cheese and sour cream in a medium bowl. Add chilies, cumin, and garlic. Stir in stock, whipping cream, and stock. Transfer to a blender in batches and process until smooth. Cover and chill until ready to serve.


Chilled Green Chile Soup will keep up to 1 week in the refrigerator.
