5 tablespoons unsalted butter
1 1/2 cups chopped leeks, white parts only
5 cups chopped carrots, (about 1 1/4 pounds)
5 cups chicken stock
1 tablespoon fresh lemon juice
1/4 cup fresh cilantro, minced
freshly ground pepper
1/2 cup sour cream
6 sprigs fresh cilantro

Melt butter in a large saucepan. Add leeks and saute about 4 minutes. Add carrots and saute 5 minutes. Add stock. Simmer uncovered 25 minutes. Remove from heat and puree in batches in a food processor. Cover and refrigerate. Whisk in lemon juice and cilantro when ready to serve. Season with salt and pepper. Garnish each serving with a dollop of sour cream and a cilantro sprig.

For a creamier soup, add 1/2 cup sour cream and 1/2 cup half and half when adding lemon juice and cilantro.
