6 chicken breast halves
Salt and pepper
1/4 cup butter
1 can (8oz.) mushrooms
1/2 cup mushroom liquid
1/4 teaspoon thyme
1/4 teaspoon rosemary
1/4 teaspoon savory
1/2 cup dry sherry
1/4 cup dry white wine
1 tablespoon cornstarch
1 cup heavy cream
6 slices round bread
6 slices Canadian bacon
1-2 tablespoons butter

Bone and skin chicken breast; season with salt and pepper and saute i butter for 10 minutes or until brown. Drain mushrooms and set aside. Add mushroom liquid, thyme, rosemary and savory to chicken; cover and let simmer 20 minutes. Add sherry and white wine; simmer 10 more minutes. Dissolve cornstarch in cream; add to chicken. Add mushrooms and simmer for 5 minutes or untill sause has thickened. Toast bread very slowly in oven; saute Canadian bacon in a little butter. On individual serving plates, place a slice of Canadian bacon on toast, top with chicken and spoon sauce over all. Serve with heated, small glazed carrots green peas, covering each serving with a bell glass.
