Tomato Basil Soup

10 to 12 Roma tomatoes, peeled, or 1 can (28 ounces) whole tomatoes, drained
3 cups tomato juice
2 cups chicken stock
15 or more fresh basil leaves
1 1/2 cups heavy whipping cream
3/4 cup (1 1/2 sticks) unsalted butter, cut into pieces
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
freshly grated Parmesan cheese

Combine tomatoes, tomato juice, and chicken stock in a large saucepan. Simmer 30 minutes. Add basil. Transfer soup in batches to a food processor or blender and process until smooth. Return to saucepan over low heat. Whisk in cream, butter, salt, and pepper. Whisk until butter is melted and soup is thoroughly heated. Garnish with Parmesan.
