BLT with Hill Country Basil Mayonnaise

1 large egg, at room temperature
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/2 cup Vegetable Oil
1/2 cup extra virgin olive oil
1 cup fresh basil, chopped
12 slices bread
1 pound bacon, cooked crisp
1 head Boston lettuce
2 large tomatoes, thinly sliced




Hill Country Basil Mayonnaise: Process egg, lemon juice, mustard, and salt in a food processor or blender. With machine running, add oils in a thin stream until mayonnaise has thickened. Add basil leaves and process until smooth. Cover and refrigerate. Yields 1 1/2 cups.

Spread Hill Country Basil Mayonnaise on bread and assemble sandwiches using crisp bacon, lettuce, and tomatoes.
