Carrot Orange Salad with Fresh Dill

1 1/4 pounds carrots, grated
1 to 2 tablespoons balsamic vinegar
1/2 cup fresh orange juice
1/2 teaspoon grated orange zest
1 orange, segmented, or 1 small can mandarin orange segments, drained
1 tablespoon plus 1 tablespoon chopped fresh dill




Combine carrots, vinegar, orange juice, and orange zest in a serving bowl. Stir to combine. Add orange segments and 1 tablespoon dill. Lightly toss. Cover and chill thorooughly.

Just before serving, sprinkle with remaining 1 tablespoon dill.
