Quick Chop Suey

2 cups pork, cubed; could use veal, chicken or beef instead of pork
butter
1/2 cup onion, sliced
1/2 cup green pepper, sliced
1 cup celery, diagonally sliced
1 can (1 pound) bean sprouts, drained
1 can (5 ounces) waterchestnuts, drained and sliced
1 can (5 ounces) bamboo shoots, drained
1 cup vegetables, liquid reserved from canned vegetables
1 tablespoons cornstarch
1/2 teaspoon salt
2 tablespoons soy sauce
mushrooms, and almonds (optional)




Brown meat quickly in a little butter. Add onion, green pepper and celery; cook 3 minutes. Combine recerved liquid from vegetables with cornstarch. Add to meat, sirring until thickened. Add bean sprouts, water chestbuts, bamboo shoots, salt and soy sauce. (Add mushrooms or almonds id desired.) Heat; serve with rice.
