Saucy Tongue

1 tongue
1 tablespoon pickling spice, (optional)
2 bay leaves
2 ribs celery, with tops
whole cloves
1 jar (10 ounces) blackberry jelly, plus 1 cup water OR 1 jar (10 ounces) currant jelly plus 1 cup dry red wine
Juice of 1 lemon

In salted water to cover, boil tongue with pickling spice, bay leaves and celery. When tender, skin and trim tongue, and stuck well with cloves. Place tongue in buttered baking dish. Melt blackberry jelly with water or currant jelly with wine. Pour over tongue. Squeeze lemon juice over all. Bake 20 minutes in 350 degree oven, basting frequently with pan juice.
