6 Roma tomatoes, coarsley chopped
12 Greek olives, pitted and halved
1/4 cup capers, rinsed and drained
1/4 cup chopped fresh parsley
1/4 cup green onions, minced
2 ribs celery, chopped
1/4 cup fresh basil, chopped
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
3 tablespoons red wine vinegar
6 tablespoons extra virgin olive oil
lettuce leaves

Combine tomatoes, olives, capers, parsley, green onion, celery, basil, salt, pepper, vinegar, and olive oil in a large bowl. Cover and marinate at least 30 minutes in the refrigerator.

To serve, line serving plate with lettuce leaves and top with tomato salad.

Tuscan Tomato Salad may also be served as a cold pasta sauce, a condiment for sandwiches, a topping for grilled vegetables and meats, or a spread on toasted sourdough bread.
