Garlic Chicken Bites with Tomato Raisin Sauce

3 tablespoons minced fresh cilantro
2 teaspoons freshly ground pepper
8 cloves garlic, (two cloves are for sauce)
1 pound boneless skinless chicken breasts, cut into 1 1/2-inch pieces
1/3 cup tomato sauce
1 tablespoon brown sugar, firmly packed
1 tablespoon apple cider vinegar
1/2 cup raisins




Preheat oven to 350 degrees. Combine cilantro, pepper, and 6 minced cloves garlic in a small bowl. Rub mixture over chicken. Thread 1 or 2 pieces of chicken onto each skewer. Place skewers on a lightly greased baking sheet. Bake until chicken is lightly browned and cooked through, 18 to 20 minutes.

Process remaining 2 minced cloves garlic, tomato sauce, brown sugar, vinegar, and raisins in a food processor until raisins are chopped.

Serve Garlic Chicken Bites warm with sauce on the side for dipping.
