Roasted Bell Pepper and Artichoke Pizza

1 teaspoon olive oil
1 clove plus 1 clove garlic, minced
1 red bell pepper, roasted, peeled, seeded, and cut into strips
1 orange bell pepper, roasted, peeled, seeded and cut into strips
1/4 cup reduced fat mayonnaise
1/8 teaspoon crushed red pepper
1/4 teaspoon freshly ground pepper
1 package (9 ounces) frozen artichoke hearts, thawed and drained
1 (1 pound), plain or cheese flavored ready-made pizza crust
2 ounces feta cheese, crumbled (1/2 cup)
1 teaspoon chopped fresh thyme




Preheat oven to 450 degrees. Heat oil in a nonstick skillet over medium-high heat. Add 1 minced clove garlic and saute 1 minute. Stir in bell peppers. Set aside.

Place remaining garlic, mayonnaise, red pepper, black pepper, and artichoke hearts in a food processor. Process until finely chopped. Place pizza crust on a greased baking sheet or pizza stone. Spread artichoke mixture over crust, leaving a 1/2-inch border. Top with bell pepper mixture. Sprinkle with feta and thyme, Bake 14 minutes or until crust is crisp. (Cheese will not melt.) Slice and serve.
