1 package (8 ounces) cream cheese, softened
1 cup butter, softened
2 cups sifted flour
1 onion, finely chopped (for filling)
3 tablespoons olive oil, (for filling)
1 package (10 ounces) frozen chopped spinach, thawed (for filling)
salt, to taste (for filling)
1/4 pound feta cheese, crumbled (for filling)
1/2 cup cottage cheese, drained (for filling)
1 egg, beaten




Pastry: With a fork, combine cheese and butter.
Cut in flour. Work dough with hands until it
holds together. Make a ball; wrap and chill
overnight. On floured surface, roll dough to 1/4
inch thickness. Cut into 2-inch circles.
Filling; Saute onion in oil until soft. drain
thawed spinach well and add to onions with salt.
Cook over low heat until tender. Remove and
drain. Let cool. Mix cheeses and add egg. Stir into
spinach mixture and mix well.
Assembly: preheat oven to 425 degrees F. Place a
dab of filling on each pastry circle. Moisten
edges and fold over. press edges with fork.
Prick pastries. Bake on a cookie sheet for 15
minutes or until golden. These freeze well.
