Seaside Salad
Try this great seafood salad for a party or a picnic.

1 small package (3 ounces) lime gelatin
1 1/4 cups hot water
5 tablespoons vinegar
1/2 teaspoons Worcestershire sauce
1/2 teaspoon salt
Thin cucumber, and pimiento slices
1 can (7 ounces) tuna fish, or chicken
1 cup peeled, chopped cucumber
1 tablespoons chopped onion
2 tablespoons chopped pimiento
1/2 cup mayonnaise




Add hot water to lime-flavored gelatin and stir until dissolved. Add vinegar, Worcestershire sauce and salt. Measure 1/4 cup of the mixture into a 1-quart mold and chill. When nearly firm, place cucumber and pimiento slices attractively on gelatin and chill again. Add tuna or chicken, chopped cucumber, onion, pimiento and mayonnaise to the remaining gelatin mixture. Cool. When slightly thickened, spoon onto firm gelatin layer in mold. Chill again until firm. An easier version of this salad may be made by mixing all ingredients together and pouring into mold to chill until firm.
