Beef Skillet Saute

8 slices beef tenderloin, 1/2-inch thick
3 tablespoons butter
1/2 pound fresh mushrooms, sliced
2 tomatoes, peeled and coarsley chopped
2 teaspoons arrowroot
1 tablespoon beef base, (powdered stock)
1 cup hot water
2/3 cup dry red wine
Chopped parsley




Saute meat slices in butter in heavy skillet, about 3 minutes on each side. Remove to a warm platter. Add more butter to skillet if necessary. Saute mushrooms and tomatoes. Crombine arrowroot beef stock base and water; add to skillet Add wine and stir over low heat. Pour sauce over beef slices. Sprinkle with chopped parsley and serve immediately.
