1 loaf white bread, very thinly sliced
6 tablespoons unsalted butter, at room temperature
1/4 teaspoon salt
3/4 pound fresh medium shrimp, boiled, peeled, deveined, and minced
1 clove garlic, minced
2 tablespoons fresh parsley, minced
1 teaspoon grated ginger root, minced

Preheat broiler. Using a 1 1/2 to 2 inch round cookie cutter, cut bread slices into rounds. Toast on one side. Cream butter and salt until light and fluffy in a medium bowl. Stir in shrimp, garlic, parsley, and ginger. Blend well. Spread shrimp mixture on untoasted side of bread rounds. Place on baking sheet and broil until lightly browned. Serve immediately.
