1 or 2 onions, chopped
2 ribs celery, chopped
2 tablespoons butter
1 o2 2 apples, peeled and chopped
2 to 4 tablespoons chicken hen
2 tablespoons flour
1 pint cream

Cook chicken in seasoned water, reserving 1 quart chicken broth. Chill overnight; remove chicken fat from broth. Strain broth. Saute onions and celery in butter 10 minutes. Add apples; cook 5 minutes longer. Mix curry powder and flour togehter; stir into onion mixture. Add chicken broth; simmer over low heat 40 minutes. Mash through sieve. When cool, add cream and salt if needed. Chill. Serve in chilled bouillon or cream soup bowls. Put 1 tablespoon chopped white meat of chicken in each serving.
