Fried Cheese Squares with Tomato Sauce

1/4 cup unsalted butter
6 tablespoons plus extra flour
1 1/2 cups milk
2 cups Gruyere cheese, grated
1 cup Grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon white pepper
3 egg yolks, lightly beaten
2 eggs, whipped
1 cup bread crumbs
Tomato Sauce:, see our recipe




Melt butter over low heat and stir in 6 tablespoons flour. Remove pan from heat and slowly add milk, stirring constantly. Return to heat and cook, stirring constantly, until thickened to the consistency of thick mashed potatoes. Add cheeses and seasonings. Mixture will be rubbery. Remove from heat and beat in egg yolks. Pour into a 9-inch square or 8 x 10-inch pan lined with wax paper. Cool and refrigerate overnight. Cut into squares and coat with flour. Dip in whipped eggs and roll in bread crumbs. Set on wax paper and let dry. Fry in deep fat at 390 degrees F. Serve with Tomato Sauce.
