Shrimp Superbe
This appetizer is perfect for a get together or an elegant party.

40 shrimp, raw
5 tablespoons butter
1 tablespoon flour
1 tablespoon tomato paste
2 ounces dry vermouth
1 pint cream
1 tablespoon chives, chopped
1 tablespoon parsley
anchovy paste, (a dab the size of a pea)
Salt and pepper




Boil shrimp with your favorite seasonings. Drain, shell and dice. (If you must use canned shrimp, drain and rinse well.) Saute the shrimp in 4 tablespoons of the hot melted butter for 5 minutes. Add flour; blend and cook 3 minutes. Add tomato paste and blend; then add vermouth, cream, chives, parsley and anchovy paste which has been mixed with the remaining tablespoon of butter. Cook a few minutes and season with salt and pepper. Serve hot as a dip. May also be served on split and toasted English muffins for a luncheon dish. Will serve 12 as an appetizer or 6 as a luncheon entree.
