Chafing Dish Oyster Dip

4 strips bacon
2 tablespoons bacon drippings
1 bunch green onions or shallots, finely chopped
3 tablespoons flour
1 cup oyster liquor, (add water if necessary to make 1 cup)
1 pint oysters, chopped
1 tablespoon parsley, finely chopped
1 tablespoon butter
salt, pepper and cayenne
5-6 soda crackers, crushed (if needed)

Fry bacon in heavy skillet; remove and crumble. Saute onions in bacon drippings. add flour and stir well. Add oyster liquor. (Mixture will be very thick.) Add oysters, parsley, butter, salt, pepper and cayenne. Cook slightly over hot water, stirring occasionally. Add bacon. If mixture is too thin, add crumbled crackers. Serve in chafing dish with crackers or toast rounds. Serves 8-10.
