Szechwan Beef and Vegetables

2 tablespoons cornstarch
2 tablespoons sherry
2 tablespoons soy sauce
1 teaspoon salt
1 teaspoon sugar
1 pound flank steak, cut crosswise into thin slices
2 carrots, cleaned
6 tablespoons peanut or vegetable oil
1 tablespoon ginger, minced
2 cloves garlic, minced
1/2 teaspoon crushed red pepper




In mixing bowl, mix together cornstarch, sherry, soy sauce, salt and sugar. Stir in meat; marinate about 15 minutes, turning occasionally.

Cut carrots into thin match-like strips, about 2 inches long.

In Farberware® Electric wok add 2 tablespoons of the oil. Set heat ontrol dial at 350 degrees. When light goes out, add carrots, garlic and ginger. Stir-fry about 2 minutes; remove to mixing bowl. To Wok, add remaining oil. When light goes out, add red pepper and stir-fry 30 seconds. Add beef mixture and stir-fry until beef is cooked about 3 minutes.

Return carrot mixture to Wok, stir-fry 1 minute.
