Cilantro Pesto
If you like the flavor of cilantro, try this version of pesto. The jalapeno peppers and lime juice give it a Southwestern tang - and it tastes awfully good with Tex Mex food.

2 cups loosely packed cilantro, rinsed and dried
1/3 cup mild olive oil
2 tablespoons pine nuts
1/2 medium-sized jalapeño pepper, stemmed and seeded
1 medium sized clove garlic
1 teaspoon lime rind

Combine all of the ingredients and salt to taste in a blender or food processor and process to a paste. Taste and adjust the salt.
