Pacific Shrimp Salad w/ California kiwis

1/2 pound kiwi fruit, pared and sliced
1/2 pound shrimp, shelled, deveined and cooked with tails intact
1/2 cup radishes, finely julienned, and pomengranate
1/2 head butterhead lettuce
2 tablespoons oil
2 tablespoons vinegar
2 tablespoons lemon juice
1 tablespoon honey
1 teaspoon ginger
1/2 teaspoon salt




Arrange all ingredients in shallow, lettuce-lined salad bowl. Serve with Lemon Ginger Dressing.

Lemon Ginger Dressing: Combine 2 tablespoons each oil, vinegar and lemon juice, 1 tablespoon honey, 1 teaspoon grated ginger, 1/2 teaspoon salt and 1/2 teaspoon pepper; mix well. Makes about 1/3 cup
