Lamb Chops w/Cherry Pecan Sauce

4 (about 1 1/2 pounds total) American lamb shoulder chops, cut into 1/2 inch thick
Vegetable cooking spray
1 small onion, cut into think wedges
1/2 cup pineapple juice
2 tablespoons vinegar
1 tablespoon water
1 teaspoon cornstarch
1 teaspoon brown sugar
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1/4 cup dried tart cherries, (or raisins or dried cranberries)
1/4 cup chopped pecans, toasted




Spray large skillet with non-stick spray. Brown shoulder chops in medium-hot skillet. Add pineapple juice, onion, nutmeg, pepper and salt. Cover and simmer for 30 minutes or until lamb is tender. Remove chops from skillet and place on platter; keep warm. Combine vinegar, brown sugar and cornstarch; stir into ingredients in skillet. Cook and stir over medium heat until thickened and bubbly. Add cherries and pecans; heat through. Serve chops with cherry-pecan sauce. *1/2 cup fresh cherries may be used also.
