Mardarin Lamb with Oriental Noodles

1 pound boneless American lamb, (leg or shoulder)
1 Tbsp. cooking oil
2 cloves garlic, minced
1 package oriental noodles with flavor packet
1 cup water
1 small zucchini, cut in half and biased-sliced (or yellow squash)
1 carrot, thinly bias-sliced
1/2 medium red pepper, cut in 1/8-inch strips
2 stalks celery, thinly bias-sliced
1/4 cup sweet & sour sauce, ready to use
1/2 cup mandarin oranges, sliced and drained
1/4 cup almonds, coarsely chopped, optional (or peanuts)




Slice lamb in 1/8-inch strips and set aside. Heat oil and garlic to medium high heat in large skillet or wok. Add lamb and stir and fry until lamb is no longer pink. Remove from skillet and set aside. Break up dry noodles and place noodles, 1 cup water, flavor packet and vegetables in skillet. Bring to a boil; reduce heat and cover. Simmer 3 to 5 minutes until vegetables are crisp tender. Stir in lamb strips, sweet and sour sauce and oranges. Heat through. Top with nuts if desired.
