Creamy Lamb Stir Fry with Fettuccine

12 ounces boneless American lamb, (leg or shoulder)
1 carton (8 ounces) plain lowfat yogurt
4 teaspoons cornstarch
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/2 cup beef broth
Non-stick cooking spray
1 clove garlic, minced (or 1/2 tsp. bottled minced garlic)
1/2 cup onion, chopped
1/2 cup celery, sliced
1 1/2 cups fresh mushrooms, sliced
1 teaspoon caraway seeds
1 cup green pepper, cut into strips
2 medium tart apple, cut into thin wedges
1 teaspoon olive oil
3 cups fettuccine, hot cooked (or linguine)

Slice lamb into thin bite size strips and set aside. Combine yogurt, cornstarch, mustard, and salt; mix well. Stir in broth and set aside. Spray a large skillet or wok with non-stick spray. Stir-fry garlic and onion for 1 minute. Add celery, mushrooms and caraway seeds and stir-fry for 2 minutes more. Add green pepper and apples and stir-fry for 2 more minutes. Remove vegetables and apples from skillet. Add olive oil to skillet and stir-fry lamb over high heat for 2 minutes. Return the vegetable and apple mixture to skillet. Stir in yogurt mixture and cook and stir until thick and bubbly. Continue cooking for 2 minutes. Serve over hot pasta.
