Gingerbread

1 cup packed brown sugar
1 cup molasses
1/2 cup Smucker’s® Baking Healthy
2 eggs
1 cup skim milk
1 Tablespoon orange juice
1 Tablespoon grated orange rind
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ginger
1 1/2 teaspoons cinnamon
1 teaspoon cloves




Preheat oven to 350°F. Spray a 13 x 9 x 2-inch baking pan with nonstick cooking spray. In a bowl, combine sugar, molasses and Baking Healthy product; beat at medium speed until thoroughly combined. Add eggs; beat well. Combine milk, orange juice and orange rind. Combine flour and remaining ingredients. Add to egg mixture alternately with milk mixture, beginning and ending with flour mixture. Pour batter into prepared pan. Bake for 40 to 45 minutes or until a toothpick inserted in center comes out clean. Serve warm or at room temperature.
