Confetti Salad

1 (15 oz.) can black beans, drained and rinsed
8 cups water
1 medium onion, peeled
5 whole cloves
2 bay leaves
2 cloves garlic
2 chicken bouillon cube
1/2 teaspoon freshly ground black pepper
1 cup couscous
1/3 cup olive oil
1/2 teaspoon ground coriander
3 to 4 tablespoons lime juice
1/2 teaspoon oregano
1/2 teaspoon Tabasco sauce
1/2 teaspoon salt, (optional)
2 teaspoons cumin, ground
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
12 ounces boneless skinless chicken breasts, cut into 3/4 inch cubes
12 ounces black beans, peeled and deveined




Press cloves into onion and add to drained beans with water and remaining ingredients. Bring to a boil, reduce to simmer and cook over low heat until beans are just tender… Do NOT overcook. This should take bout 45 minutes for dry packaged beans & 30 minutes for canned beans. Beans are done when ‘al dent’. Turn off heat and allow to cool in cooking liquid. Discard onion, cloves, bay leaves, and garlic, then drain beans and rinse.

Couscous:

Bring chicken broth to a boil and pour over couscous. ¾ cup Cover and let stand 10 minutes or until done. Fluff with fork.

Dressing:

Combine dressing ingredients, whisking thoroughly.

To Complete Salad:

Toss cooked couscous with diced peppers, cooked and drained beans, cooked chicken breast and cooked shrimp. Pour dressing over salad mixture, being careful not overdress. Ready to serve immediately. Makes 8-10 servings, about 1 cup each.

Variation:

Skewer chicken and shrimp. Marinate in a small amount of dressing for 30 minutes to 1 hour and grill. Serve on top of Confetti Salad or remove from skewers and toss with salad.

DRY PACKAGED BEAN PREPARATION METHOD:

Rinse beans well. In a saucepan, cover beans with water at least 2 inches above the beans and bring to a boil over high heat. Simmer for 5-10 minutes. Turn off heat and let stand at least one hour before proceeding with recipe.

Ingredients 11-17 are for the dressing.
