Oven-Roasted Mushrooms & New Potatoes

1 1/2 pounds new potatoes, cut in half
4 tablespoons olive oil
1 cup red bell pepper, sweet, cut in 1/2
1 teaspoon garlic, minced
1/2 cup green onions, sliced (scallions)
1 teaspoon salt
1/2 teaspoon thyme leaves, crushed
1/4 teaspoon ground black pepper

MUSHROOM MIXTURE COULD INCLUDE: WHITES, CRIMINIS, PORTABELLAS & SHIITAKES. Preheat oven to 450ºF. In a large 13" x 9" x 2" baking pan toss potatoes with olive oil; bake uncovered, 10 minutes. Stir in mushrooms, red pepper and garlic; bake uncovered, until potatoes are nearly tender, about 15 minutes. Stir in green onions, salt, thyme and black pepper; bake until vegetables are tender, about 10 minutes longer.
