Southwestern Rice Salad

7 cups long grain rice, cooked
2 cups olives, sliced
1 1/2 cups corn kernels
1 1/2 cups red bell pepper, finely diced
1 1/2 cups tomatoes, seeded and diced
4 to 6 green onions, sliced
2 (8 ounces each) avocados, diced
2 tablespoons jalapeno chili, finely diced
1/3 cup fresh cilantro, finely chopped
1 cup olive oil
1/4 cup lime juice
1 cup sour cream
1 teaspoon or to taste ground cumin
1/4 teaspoon or to taste cayenne
1 1/2 teaspoon salt
1 teaspoon sugar




Mix rice with dressing.
Gently mix in remaining ingredients.
Adjust flavors to taste.


Notes:
Ingredients #10-16 are for the dressing.
