Watercress and Shrimp Salad Adobo

12 jumbo shrimp, peeled and deveined
1 jar American Spoon Adobo Sauce
2 bunches watercress, cleaned of large stems
1 cup canned black beans, drained
1 cup frozen corn, thawed
1 cup jicama, peeled,sliced,julienne
1 cup popcorn shrimp or bay shrimp, cooked
1/2 cup pineapple tidbits, fresh or canned (drained)
1/4 cup red onion, diced
1/4 cup red bell pepper, seeded,diced
2 Tablespoons lime juice, fresh squeezed
2 Tablespoons cilantro, fresh chopped
1 teaspoon cumin, powder
1 teaspoon salt




Preheat gas or charcoal grill. Combine jumbo shrimp and 1/2 jar of Adobo Sauce in a mixing bowl. Stir gently. Set aside. Clean and thoroughly drain the watercress. Arrange watercress on four plates. Combine remaining ingredients, including Adobo Sauce in a large mixing bowl and mix gently. Set aside.

Grill jumbo shrimp, being careful not to overcook. Spoon contents of large mixing bowl over watercress, dividing evenly among the four plates. Place three of the grilled, jumbo shrimp on top of each. Garnish with cilantro sprigs. Serve immediately.
