Chunky Quinoa Chili

1/2 cup olive oil
8 cups sweet onion, chopped
4 cups green bell pepper, chopped
1 1/2 tablespoon garlic, minced
2 quarts diced canned tomatoes, undrained
5 cups tomato sauce
1 1/2 quarts water
2 cups lentils, uncooked
1/3 to 1/2 cup chili powder
1 1/2 tablespoons ground cumin
8 cups kidney beans, cooked
6 cups olives, wedged
6 cups Shredded Cheddar cheese

Heat oil in a stockpot or steamjacketed kettle over medium heat. Stir in onions, bell peppers, and garlic. Cook until onions are soft, about 5 minutes.
Stir in diced tomatoes, tomato sauce, water, quinoa, lentils, chili powder and cumin. Simmer, covered, for 15 minutes.
Blend in beans and olives. Continue cooking 10 to 15 minutes, until quinoa is transparent.
To serve: portion 1 1/2 cups chili into a bowl. Top with 1/4 cup shredded cheese.
