Ham and Broccoli Breakfast Muffins

1/4 cup margarine
6 tablespoons all-purpose flour
4 cups milk
6 hard-cooked eggs, diced
1/2 teaspoon salt
1/4 teaspoon pepper
4 English muffins, split, toasted and buttered
8 slices ham, cooked
2 boxes frozen broccoli florets, cooked until crisp tender

Melt margarine in medium skillet over medium-low heat. Add flour and stir until combined. Gradually pour in milk, stirring until smooth and thickened. Add eggs, salt and pepper and cook until eggs are heated through, 1 to 2 minutes. Arrange 2 muffin halves on each plate. Top each with 1 slice ham and 3 broccoli florets. Pour sauce over and garnish with remaining broccoli. Serve immediately.
